What does extra-grade round-grain rice mean?

“Extra” is the commercial grade indicating the level of grain selection. The Arroz de Valencia Protected Designation of Origin certifies its origin and the controls applied from production through to sale.

How to cook it

For a dry rice dish, one part rice to two parts water can be an initial guide, with around 15–20 minutes of cooking and about 3 minutes of resting. These figures are a starting point. Evaporation in a wide paella pan differs from that in a deep pot; heat intensity, stock temperature and the amount of other ingredients also matter.

Creamy and soupy rice dishes need more liquid. Adjust the amount to your pan, heat and desired texture; the ratio above is not a fixed rule for these dishes.

Recommended uses

Recommended for dry, creamy and soupy rice dishes. It can also be used for risotto: add stock gradually, stir regularly, then finish with butter and cheese for a creamy, flowing texture.

Storage

Store in a dry, ventilated place, protected from moisture and away from heat. Once opened, transfer the rice to a clean, tightly closed container. Always check the best-before date printed on the bag.
